Rice Pan Cake Recipe | Surnoli Recipe



This is South Indian breakfast or Dinner Recipe. It's quite similar to aapam but compare to appam I felt it was Easy . I Following Sanjeev Kapoor's recipe. There only mentioned the name Surnoli
Ingredients
•Rice 2 cups
•Yogurt                                1 1/2 cups
•Pressed rice (poha)                1/2 cup
•Scraped coconut                1/2 cup
•Oil                                        2 tablespoons + for cooking
•Ginger,finely chopped        1 tablespoon
•Green chilies,finely chopped 2-3
•Green peas                         1 cup
•Salt to taste

Method
Soak rice in yogurt in a bowl for 4-5 hours. Add poha, ¼ cup coconut and keep aside for half an hour. 
Grind into a coarse paste, cover and set aside to ferment overnight. 
Heat 2 tbsps oil in a non stickpan, add ginger, green chillies and sauté.Add green peas, salt, remaining coconut and toss well. Transfer the mixture into a bowl and lightly mash the peas. Heat a non sticktawa and spread a little oil on it. 

 Add salt to the fermented batter and mix well. Pour a ladleful of the batter on the tawa. Immediately, sprinkle some peamixture over it. Sprinkle some oil and press the mixture lightly.
Cover and cook till the underside turns golden.
 Transfer onto a serving plate and serve hot.

Some Note
Instead of pea mixture can use any veggie mixture like Capsicum,carrot,onion mixture or Cabbage,tomato,spring onion.If you like coconut can add in this mixtures also.

5 Taste Uthappam Recipe



I came to know this Idea after having 5 taste Uthapam in Sarvana Bhavan,there they served plain uthapams with different toppings but I have done change with batter.This could be a perfect snack/ breakfast for your kid and of course for us also. 
Ingredients
Dosa Batter      5 cup
Tomato,Red     3 medium
Spinach(Palak)  1 small bunch
oil                    as needed
For Dressing
Sprouts             1/2 cup
Onion               1 small
Tomato            1 small
capsicum          1 small
(cut tomato,onion,capsicum into desired shape)

Method
Blanch palak in hot water and make puree. Make tomato puree .
Take 1 cup dosa batter and mix palak puree and keep aside. Take another a cup of batter and add tomato puree and keep aside. Keep rest batter for other dressing.
Heat dosa pan and grease it with oil/ghee.Pour a ladleful of palak flavored batter on the pan and It should be thick. No need to spread the batter Cook in low to medium flame to get golden crust. Drizzle some oil/ghee over and around the uthappam.
Flip once the bottom turns golden and cook in low to medium flame for a minute or 2 or until golden in colour. Drizzle oil when ever desired.

Same proses with tomato batter
Pour a ladleful plain batter (by adding water make right consistency)and sprinkle sprouts and sprinkle oil and cook both sides
Again Pour a ladleful plain batter and arrange capsicum,tomato,onion and sprinkle oil,cook both side
 Enjoy hot with  sambar and other choices of your chutneys. 

Note
Always cook in medium flame to get a perfect golden crusted uthappams.
Ghee gives a great taste to the uthappams, 
Dosa batter should be thick becoz we have to add both puree.

Mysour Masala Dosa Recipe/Dosa Recipe



This dosa is quite different becoz of it's red chtuney. First time I had it at my neighboure's home.I asked her about it she told me to go through Sanjeev Kapoor's Reciepe and next day I searched .I am  following and sharing same Recipe.

Ingredients
For Dosa Batter
Rice                     1 cup
Urad Dal              1/4 cup
Fengure seeds      1/4 tsp
For Potato Masala
potato,boiled,mashed   3-4 medium
Onion, sliced                1 medium
Green chilly,chopped     2
Curry Leaves               few
Turmeric                    1/4 tsp
Oil                            2 tbsp
Salt                          to taste(1 tsp)

Red chutney
•Dried red chilies            5-6
•Ginger                          1 inch piece
•Garlic                           7-8 cloves
•Roasted chana dal (dalia) 1/2 cup
•Salt to taste(1/2 tsp)
Method
Wash and Soak all ingredients of dosa batter for 4-5 hrs. then grind with little water to a batter consistency and keep aside to Fermat for 8-10 hrs.

Boil the red chillies in a little water. Roughly chop ginger and garlic and put into a mixer jar.
Add chana dal and salt. Add red chillies and grind with a little water to a fine chutney.

Heat oil Add green chilly and curry leaves saute for few seconds.Add onion saute till golden brown,  then add turmeric and salt.
Add potato and mix well.

Whisk the batter well, add salt and Water if needed.Batter should't be very watery/thick.
Heat a non stick dosa tawa, wipe with a damp cloth. Spread a ladle of batter to cover the entire tawa.
Spread the chutney over the dosa, sprinkle a little oil,then spread potao masala and cook on high heat for 2-3 minutes till the underside is golden crisp.
 Fold into a crescent shape and serve hot with coconut chtuney.
