Mini Buger With Rawa Tikki | Easy Burger Recipe | Healthy Burger Recipe


I like fast foods very much but these are loaded with extra calories,so always trying to make them healthy.These tikkies made with upma (cooked sooji) I tried rawa rolls before it but
with mased potatoes but this is just like vegetable upma,actually I saw this recipe on Sanjeev Kapoor's Show @Sony TV and I did some changes and enjoyed Happy meal @ Home




Preparation Time : 10 min.     Cooking Time : 30 min.    Serving  : 4
Ingredients
8 Mini buns
1/2 cup butter
Oil to deep fry
Cheese Slices (optional)

For Flavored milk
3 cups milk 
2-2 cloves and pepper
4 garlic cloves
1 cinnamon stick 
2 whole green cardamoms
1 whole onion

For Tikki
1 cup semolina roasted(sooji/rawa) 
1/2 tsp Red chilli powder
2 tbsp oil
1  onions chopped
1 cup chopped mixed peppers (Red ,green,yellow capsicums) 
1 tsp ginger-garlic paste 
1/2 tsp cumin seeds
salt to taste


Dip/Chtuney
1 small bunch of coriander leaves
1/2 cup hung curd
1/2 onion
3 Green chill
1/2 inch ginger
3-4 garlic cloves
salt to taste

Salad
1 small cucumber sliced
1 tomato sliced
1 Onion sliced

METHOD
Heat the milk with all spices in a pan and cook on low heat for 6 minutes. 
Meanwhile Heat the oil in a pan add cumin seeds then add onion and sauté the onions till golden brown then add ginger garlic paste, peppers and cook for 3-4 minutes.
Then add sooji and saute for min. 


Add salt and red chili now strain the milk and pour into sooji mixture and whisk until the mixture is thick.
Grease a plate with oil and pour the mixture into the tray and spread it evenly with a spatula.
Place the tray in a refrigerator for 10 minutes to chill and set.
Cut the set semolina mixture into round or square tikkies. 




Heat the oil in frying pan or kadai and shallow or deep-fry till crisp on the outside. Drain on absorbent paper.
For the dip, blend all the ingredients in a blender till smooth.
Cut the bun apply little butter,then dip,keep a slice of tomato then tiiki put onion and cucumber slice and cover with bun.


Serve hot with tomato ketchup or Green dip.




Note
I used salad in slice but can use shredded or grated also because I felt it's easy to assemble and serve.
For tikkies can use any vegetables like carrot,cabbage,beans,green veggies too and paneer also.
If your tikki is breaking in frying then add 2 mashed potatoes in sooji mixture. 



Another way also-
whisk 4 tbsp maida (all purpose flour) with little milk (1/4 cup) to make a light batter. Season to taste with salt, pepper, cumin powder and chili powder.
Dip the tikkies into the batter and roll them in the crushed cornflakes or bread crumbs or poha (pressed rice) and deep fry or shallow fry.

If you are not Calorie  conscious  enjoy with Cheese ....

Corn canapes Recipe | Bread Recipes


Bread canapes topped with cheese corn turns out really delectable. Flowing My Blogger Friend Preeti Jaipal's Recipe with little change. 


Preparation time 10 min.
Cooking Time 15 min.
Serving  4

Ingredients:
12 bread slices, cut in rounds
1 cup corn, boiled
1 capsicum, chopped
1 onion, finely chopped
6 tbsp cheese spread
3 tbsp hung curd
1 tsp black pepper powder
1/4 tsp cumin powder
Salt to taste
Few cherry Tomato for Garnishing

Method:
In a boil, add onion, capsicum ,corn and add cumin and pepper powder and mix well.
Mix cheese spread and curd.
Now spread mixture evenly on bread slices.Garnish with cherry Tomato.
Cook on non stick pan  for 4-5 min till crispy.



Serve hot with tomato ketchup.



Note 
Can make in oven also.
Can use cheese cube instead of cheese spread,grate and topped on slice just before grilling  but add little more curd.
Bread slice can cut in any shape.

Pasta Salad | Pasta Recipe


Vik doesn't like Pasta, that's why  I never tried but it was a golden chance for me to try something new,I went to Bangalore to see my Best friend n Off-course It was nice time n one day she told  me to cook pasta n I tried it and it came yummmmm:))

Preparation Time 15 min.
Cooking Time 5 min.
Serving 4
Ingredients:

2 cups Penne pasta(I used macaroni), cooked according to package directions, drained and rinsed
juice of 1 lemon
2       cloves garlic, mashed and finely minced

3/4   cup hung curd
5       tbsp cheese Spread
1/4    cup cottage cheese
1/2    cup finely chopped red capsicum (I used all three colored capsicums)
½      cup cucumber, diced
½      onion, finely chopped
8-10  cheery tomato, halved 
5       tbsp finely chopped fresh basil leaves
Few black Olives (optional)
Salt and black pepper (according to taste)

Method:

Put drained warm pasta in a large bowl and toss with the lemon juice.
In a cup or small bowl, combine the garlic with the hung curd and cheese spread. Stir into the pasta.
Add all chopped vegetables. Toss to combine thoroughly. If desired, add more cheese. Taste and add salt and pepper, as needed.

Note
In pasta salad Mayonnaise is essential part but i tried with out it and Really it came out just Yummmm!!!!
If it's chilled taste is very nice.

Corn Salad | Sweet Corn Recipe


 In salad also we want some new and different and it's tasty n healthy version. I love it without any masala just boiled corn.

Ingredients:-
Add caption
1 cup Sweet corn niblets,boiled
1 Tomato, chopped       
1/2 small capsicum,chopped   
1 tsp Lemon juice            
1 tsp zeera powder  
1/4 tsp chaat masala         
1/2 tsp Black pepper powder 
4 tbsp coriander leaves,chopped
Salt to taste


Method:-

Mix all salad item in a large bowl then add all spices and mix well .
Add lemon juice & coriander leaves , mix well.
Serve chill or as it is.

Note
Can add Cucumber and carrot also.
If you want more spicy add green chilly.

Home Made French Fries | Potato Recipe


French fries Yuumm..... All time favorite of Kids n as well as elders also,first time tried at home n Followed the Sanjeev Kapoor .And Really it's easy at Home Now  Enjying French Fries  at home :))
Ingredients
5 large Potatoes
Salt to taste
Oil to deep fry

Method
Peel the potatoes and keep them soaked in water. Cut them into one centimeter thick slices and further cut into finger sized pieces. Keep sufficient water for boiling in a large pan. Put the potato pieces in the water, add 1 tsp salt and boil till half done.
Drain and cool the potatoes in the refrigerator or in cold water. Transfer the potato pieces into a zip-lock bag and seal after removing any excess air. Keep them in the deep freezer

When required remove them from the deep freezer and deep fry directly in medium hot oil till golden and crisp. Drain and place on absorbent paper. Add salt,chilly flakes only after removing them from hot oil.

Serve hot.

Biscuit Pizza Recipe | Biscuit Sev Puri Recipe



It's very Quick Snack.I had it in  my Friend's Home,after that Today I got time, Actually I din't prepare anything for breakfast so I did it n You can't Believe  it's Best for  Hurry - Barry Morning ....


Preparation & Cooking Time 15 min
Serving                     2
Ingredients

Salty Biscuits                    10-12
Capsicum, finely chopped   1/4 cup
Tomato, finely chopped      1/4 cup
Sev                                 1/2 cup
Chaat masala                   1 tbsp
Tomato Sauce                   4 tbsp(as needed)

Method
Keep Ready everything , arrange biscuits top with capsicum and tomato.Sprinkle Chaat masala,then Sev and top with Tomato Sauce.



Serve immediately.
Method
It's Best with Maska - chaska Biscuits.
If you are Ready with green and sweet chutney then can make Biscuit Sev Puri also.Top with potato ,onion,tomato and both chutney then sprinkle sev and enjoy Sev puri.

Bhajiya /Pakora /Gulgle Recipe | Pakora Recipe



It's last month's Click, actually it was drizzling n climate also chilled, So VIK asked for bajiya n gulgule but i was ready with Dhokla then in Hurry Barry I done preparation for it, that's why I couldn't clicked step by step pics but I promise next time whenever I will cook pakora , will share clicks.
Ingredients
For Gulgule
2 cup of whole wheat flour (gehun ka atta)
1 cup of Gur / Jagari
1 tsp saunf/Fennel seeds
Oil to deep fry
water as required


Method
Cover the gur with hot water and stir till dissolved. 
In another bowl take atta Add the gur solution to it to form a batter of dropping consistency (adding more water if required). 
Add the saunf. leave it for half hour.
Heat oil and pour small dumpling by hand or spoon and fry the gulgulas as they be golden



For Besan pakora
2 cup Gram flour/Besan
1/4 tsp Ajwine /Carom seeds
2 Green chilli Chopped
a pinch Turmeric powder
1 small onion,sliced
1 small potato,sliced
8-10 spinach leaves
salt as needed
oil to deep fry
Method
In a Bowl mix besan ,salt,turmeric powder,ajwine,green chilli,add water to make thick smooth consistency. Leave it for half hour.
Add 2-3 tbsp boiled oil in pakora mixture and mix it well.Deep Potato/onion/Spinach in mixture and deep fry till done.
Serve hot with tomato sauce or green chtuney.

Note
Both mixtures should't be very thick or watery. Correct consistency only give you crispy pakora/gulgule.
Flame should be medium.

Cup Pizza Recipe | Bread Pizza Recipe



If not having Microwave , then also can do simple baking.I have Gas oven which mostly using for Dal Bati(rajasthani or Marwadi Cuisine) but I used it for Tandoori Roti,Naan ,Cake also and this time for cup pizza. For pizza using Ready Base Baking in nonstick tawa.

Ingredients
Bread slices 12
Onion                   1
Tomato                1
Capsicum              1
Mozzarella cheese To top
Pizza sauce 2 tblsp

Olive oil 2 tsp
Crushed red pepper To sprinkle on top

Method:

To make pizza cups, cut the bread slices with a lid to a circle. Brush a muffin cup (i used normal cups) with oil and place these bread circles in it so that to make a cup shape.Spread the Pizza sauce.

Sprinkle the chopped veggies and cheese on top of it. Do the same procedure for bread pizza, to the bread directly and bake them in gas Oven.





Bake for 7-9 minutes or until the bread turns golden in colour and crisp too.
Can Make Bread pizza(not cup pizza) on nonstick tawa also.


Both ways and tasty evening snack for your kid is ready!


Notes :
When making pizza cups, you can skip cutting in to circles and just keep the bread as such in the cups.
Use the trimmed part of the bread for making bread crumbs.

5 Taste Uthappam Recipe



I came to know this Idea after having 5 taste Uthapam in Sarvana Bhavan,there they served plain uthapams with different toppings but I have done change with batter.This could be a perfect snack/ breakfast for your kid and of course for us also. 
Ingredients
Dosa Batter      5 cup
Tomato,Red     3 medium
Spinach(Palak)  1 small bunch
oil                    as needed
For Dressing
Sprouts             1/2 cup
Onion               1 small
Tomato            1 small
capsicum          1 small
(cut tomato,onion,capsicum into desired shape)

Method
Blanch palak in hot water and make puree. Make tomato puree .
Take 1 cup dosa batter and mix palak puree and keep aside. Take another a cup of batter and add tomato puree and keep aside. Keep rest batter for other dressing.
Heat dosa pan and grease it with oil/ghee.Pour a ladleful of palak flavored batter on the pan and It should be thick. No need to spread the batter Cook in low to medium flame to get golden crust. Drizzle some oil/ghee over and around the uthappam.
Flip once the bottom turns golden and cook in low to medium flame for a minute or 2 or until golden in colour. Drizzle oil when ever desired.

Same proses with tomato batter
Pour a ladleful plain batter (by adding water make right consistency)and sprinkle sprouts and sprinkle oil and cook both sides
Again Pour a ladleful plain batter and arrange capsicum,tomato,onion and sprinkle oil,cook both side
 Enjoy hot with  sambar and other choices of your chutneys. 

Note
Always cook in medium flame to get a perfect golden crusted uthappams.
Ghee gives a great taste to the uthappams, 
Dosa batter should be thick becoz we have to add both puree.

Palak Aloo Toast Recipe | Spinach Potato Toast Recipe



Before it I told I like winter Becoz of  Green Vegggeies . So I tried Spinach with Potato and another thing it's my first time n it came Awesome  It's tasty n as well as Healthy also.
Ingredients                                    Serving  4
• Bread                                       12-14 slices
•Sesame seeds (til),roasted           4 tablespoons
•Spinach,finely chopped              1 small bunch
•Olive oil/Oil                              2 tablespoons
•Onions,finely chopped               2 medium
•Salt to taste
•Green chilli                              2
•Potatoes,boiled and mashed 4 -5 medium
•Green chutney                          1 Cup
•Cheese,grated                          1 cup(optional)
Tomato,cut into slice, seeded 1 medium
•Butter                                      1/4 cup

Method
Heat olive oil in a pan, add onions ,add green chilli and sauté till lightly browned. 
Add spinach and salt and continue to sauté. Add mashed potatoes and mix well.


 Arrange  bread slices on the work top. 
Spread butter and green chutney on all of them. Spread the potato mixture over the chutney evenly.
 Sprinkle grated cheese and roasted sesame seeds. Finally place red capsicum strips decoratively on the top.
 Place the bread slices on the non stick tawa  and Roast till the bread slices turn crisp. 


Serve hot with tomato ketchup .
