Rasgulla Recipe | Paneer Recipe | Easy Sweet Recipe



I goggled and got so many Rasgulla recipes then I got this one on Sify.com. I tried and in first time it came out very  nice but didn't get time to post and some problem in blog also that's why after a long break I am here. I tried 2 methods and sharing here but I felt  first one is very easy. 




Preparation Time  20 mins    Cooking time: 25 mins    |  Makes: 20 Nos.
Ingredients:
1 ltr. milk 
3 tbsp lime juice
1 tsp - sooji (semolina)
1 1/2 cup - sugar
1 1/2 cup - water
8-10 glasses water to cook the rasgullas


Method
Boil milk and add lemon juice to the boiling milk.
Continue heating until milk completely curdles and you could see the whey water getting separated completely. Switch off the stove and add ice cubes.
Now take a cheese cloth or thin dupatta and strain the paneer. 
I did this with the cloth over a metal strainer and a bowl below to collect the whey water.
Wash with cold water to remove sour taste.



Make a potli /bag and at the same time keep squeezing it so as to remove the water.
When you see a ball of chenna in the center of the muslin cloth it is a sign that the chenna is ready.
take Paneer and start kneading until smooth by hand but For kneading I used mixer grinder it's easy way to get smooth texture.

Meanwhile boil about 7-8 glasses of water in a large cooker/wide vessel.Take kneaded paneer add Rava and knead again.Now make small balls with paneer 


When the water starts boiling lower the flame and add balls to the boiling plain water (you do not need the sugar syrup at this stage).
Take  1 whistle on High flame then lower the flame cook for another 7 mins.Turn of heat and open the cooker only after it has cooled down completely .It will be double in size.

Meanwhile Take 1 1/2 cup water and 1 1/2 cup sugar and boil it 4-5 min. and keep aside.
Now carefully remove the rasgullas in a bowl and add warm the sugar syrup
  


Let cool at room temp then put in the refrigerator for 4-5 hrs.
Serve Chilled.


Note
If you wish can add rose essence in sugar syrup.
Can use curd,vinegar also instead of lemon juice.
You can use ready Paneer also(like Amul,hatsan etc.)

Another Method also is here-
Take 2 cup sugar and 3 1/2 cup water ,elachi powder in a pressure cooker and boil it.

After the sugar gets dissolved completely and the syrup boils,add the paneer balls  carefully one by one.

Cover the pressure cooker and cook it till you get one whistle on high flame. Then cook another 5-7 min. on low flame.

Put off the flame and let it cool by itself.

But I felt First one is easy.

Malai Paneer | Kashmiri Paneer | Paneer Recipe






Paneer cooked in  silky,milky, creamy gravy.Easy to make when some guest are on the door.It's my First Attempt ,I searched on web and I made as my family member's taste.





Preparation Time: 05 min Cooking Time: 15 min
Serves: 3 servings
Ingredients:
150 gm Paneer (cottage cheese)
1/4 cup fresh cream
1 tsp Kasturi Methi (Dried Fenugreek Leaves)
1/2 tsp White pepper Powder
Few Coriander Leaves
Salt to taste

To Grind
2 medium Onion, chopped
3 Green chilies
1/2 inch  Ginger
2-3 Garlic cloves
1 tbsp poppy seeds 
10 Cashew Nuts

To Temper
3 Green cardamom,crushed
3-3 Clove and black pepper
4 tbsp butter/ghee



Method
Boil a glass of water and add chopped onion,boil it for a min. then grind along with ginger,garlic and green chilly.



Soak cashew nuts and Poppy seed in hot water or Milk for 60 minutes and grind them with water to make a smooth dry-fruit paste.
Cut paneer into desired shape. Heat 1/2 tbsp ghee in  pan on low flame. 
Shallow fry or roast paneer triangles or strips until its edges turn light brown. Drain and keep aside.



Heat remaining tbsp ghee in same pan. Add onion paste and saute until light brown. It will take  2-3 minutes on low flame. 
Add Cashew  paste and saute for a minute.
Add some water(1/2 cup) and let mixture cook until it start boiling .
When mixture starts to boil add paneer and fenugreek leaves.Mix and cook for 3 to 4 minutes on low flame. Add fresh cream .Mix well and cook for a min. Do not cook for long time after adding cream because it curdles if cooked more.



Turn off the flame and Garnish with fresh coriander leaves.
Serve hot with roti,naan but I enjoyed with Tandoori Roti.



Note
Instead of cashew and poppy seeds can use Alomands Or melon Seeds for different taste and texture. 
If you like mild sweet taste can add a tsp sugar.
Can add Garam masla and turmeric powder but have to compromise with creamy white color.

Paneer do Pyazza | Paneer Recipe




It's being a long time I was thinking to try this recipe.Last month while I was visiting my Mom's place, I got chance to cook it for them,another one reason Vik does't like  onion riched gravy and as It's fully loaded with onions, it was a win win chance for me. 
My Mom was very impressed and my Paa found it super cool......good thing is, after seeing clicks Vik is craving to try it.



Preparation Time: 10 min Cooking Time: 20 min
 Serves: 3 servings
Ingredients:
150 gm cottage cheese (paneer),cubed
2 large Onion + 1 small onion

4 medium Tomatoes
1/2 inch Ginger,grated
3 cloves Garlic, finely chopped
4 tbsp+1 tablespoons oil
2 tbsp Fresh Cream
Few Coriander Leaves, finely chopped
Salt to taste

Spices

1 tsp Cumin Seeds
1/8 teaspoon Turmeric Powder
1 tsp Red Chilly Powder
1 tsp Coriander Powder
3 Green Cardamoms
3-3 Pepper and Cloves
1/2 inch cinnamon stick
1 small piece of Bay Leaf
1/2 tsp Garam Masala
1 tsp Kasturi Methi (dried fenugreek leaves)


Method 
chop 1 onion very finely. Cut remaining onion into 4 equal parts and separate its layers. 
.


Chop 2 tomato and make puree of remaining tomatoes
Heat 1 tbsp oil in a pan and shallow fry onion layers till light brown and keep aside.
Heat remaing  oil in a same pan. Add cumin seeds,Cinnamon stick,bay leaf,pepper,clove and cardamoms,(oops i forgot to add cinnamon and bay leaf) when they begin to splutter 
 add chopped onion and saute till light brown.
Add  ginger,  garlic and  saute for a minute.
Add  chopped tomato and tomato puree,saute till oil starts to separate.





Add  all other spices ,kasturi methi and salt ,expect garam masala  mix well and cook for a minute.
Add paneer cubes,fried onions, 1/4 cup water and cook for few minutes.
Add fresh cream and garam masala mix well and turn off the gas.



Garnish with fresh coriander leaves and serve hot with Paratha,Naan or tandoori roti.



Notes

If you like mild sweetness then add a tsp sugar or honey.
Adjust Gravy according to your taste or choice if wants thick then it's Ok and if little more gravy add little water and cook for some min.

Home made Paneer | Paneer Recipe


I searched on net and read so many recipes then I took conclusion from all and mingle with my Mom's Recipe, she always makes in this way n she thinks any time we can get pure n fresh paneer at home and it's very true....
Ingredients

1 liter Milk (I used full cream)
1 tbsp lemon juice


Method

Boil milk and add lemon juice to the boiling milk.
Continue heating until milk completely curdles and you could see the whey water getting separated completely. Switch off the stove.
Now take a cheese cloth or thin dupatta and strain the paneer. 
I did this with the cloth over a metal strainer and a bowl below to collect the whey water.
Wash with cold water to remove sour taste.Squeeze the excess water by hand.

Place it in a flat platform and keep a flat weight over it to press the paneer for setting it.
Wait for 3 hours or more to set it and then cut into stripes using knife. 

You can refrigerate before cutting and cut when ever you are going to use the paneer.
Then cut into small cubes and store in the fridge in a ziploc. (Use within 2-3 days)
To use it from freezer/ fridge, just immerse in hot water(not boiling) until you use. 


Notes


Make sure setting time at least 3 hours. More the time, better the texture of the paneer to get smoothness.
You can knead the chenna (paneer separated from whey) before weight putting  to make the paneer smooth. 

If the cloth is not tight enough to hold the shape in the sides, then sides may be bit crumbly.
You can use curd or vinegar also to curdle the milk. 

You can add 1/2 tsp of corn flour or all purpose flour(maida) in mik. This is used as binding agent and also prevents the paneer from crumbling.

Colour of the paneer depends on  the milk type we use.

Can use whey water to for making dough,cooking rice,dal etc.

Shahi Paneer | Paneer Recipe

   
     

Paneer cooked in  Rich tangy creamy gravy.

Preparation Time: 10-15 min.
Cooking Time       20-30 min.
Servings: 3
Ingredients
200 gm  Cottage cheese (paneer),cut into cubes
2  tbsp Butter/Oil
2  Onions,finely chopped
15-20 Cashew nuts
5  Tomatoes,finely chopped
1  tsp Red chilly powder
1  tbsp Coriander powder
Salt to taste
2  tbsp Butter
1/2  cup Cream
1 tsp  Kastoori methi powder
1 tsp  Garam masala powder
1/4 tsp  Green cardamom powder

Method
Heat oil in a non stick kadai. Add onions and cashew nuts and sauté lightly. Add tomatoes and cook for 10-12 minutes or tomatoes are pulpy.Add red chilly powder, coriander powder, turmeric powder, salt and sauté. Transfer this mixture into a mixer jar, cool and grind to a paste with a little water.



 Transfer the mixture into the same kadai. Add butter, cover and cook on low heat for 10 minutes.
Add cream and mix well. Add paneer, kastoori methi powder, garam masala powder, green cardamom powder and mix well. 



 Transfer into a serving bowl, garnish with some cream and serve hot.

Note 
To make jain gravy avoid onion and  soak almonds,poppy seeds,cashew in water or milk and grind into fine paste.
Don't boil more after adding cream.

Paneer Bhurji Recipe | Paneer Recipe


One of the easiest recipe of paneer. Yestarday night about 1 ltr. milk got curdle ,so I made paneer and I was in Hurry -Barry ,so I made for lunch easy but yummy Paneer Bhurji. Can wrap  in roti or paratha and Yummy Paneer Roll is Ready !!!! Best for lunch box.

Preparation time 10 min
Cooking Time 15 min.
Serving 3 
.
Ingredients:
1 cup grated paneer(150 gm)
1 big onion, finely chopped
1 green chilly, finely chopped
2 big tomato, finely chopped
pinch of turmeric powder
1 tsp red chilly powder
1/4 tsp cumin seeds
1 tsp coriander powder
1 tsp kasturi methi
pinch of garam masala powder
4-5 tbsp  milk or 2 tbsp cream
salt to taste
3 tbsp oil
fresh coriander for garnish

Method
Heat oil in a vessel, add cumin seed and chopped onions and  saute till onions turn transparent. Add the chopped tomato,green chilly and cook till they turn soft, approx 3-4 min.
Add turmeric, coriander, red chilly powder and kasturi methi and combine. 
Add grated paneer and stir well to combine and cook for 2-3 mints. Add the milk ( I used Cream) and toss the contents on medium high flame and see that the paneer does not stick to the vessel. The milk should evaporate. Add garam masala pwd and mix gently.

Finally, garnish with fresh coriander leaves and serve hot with rotis or paratha.



Note
can use Capsicum also (all color).If you are using, Add them with tomato.
Can add green peas but boiled,when adding paneer.
Can use ginger and garlic also but I did't use.

Paneer Pasanda | Paneer Recipe


Paneer slices stuffed with  mashed paneer and nuts mixture, and cooked in a flavorful onion-tomato gravy. It's quite difficult but best for any special occasion .
Cooking Time: 30-40 minutes
Servings: 4 Preparation Time: 10-20 minutes


Ingredients
200 gram Cottage cheese (paneer)

1 carrot , grated
Oil to deep fry
1 green chilly ,chopped
Salt to taste
4-5 tbsp Cornflour/ corn starch

For gravy
3 tbsp Oil
1 Bay leaves
1/2 inch Cinnamon sticks
5 Green cardamoms
4 Cloves
3 medium Onions,sliced
2 tsp Ginger-garlic paste
4 medium Tomato 
1 tsp Red chilly powder
1 1/2 tsp Coriander powder
1/4 tsp Turmeric powder
Salt to taste
4-5 tbsp Cream
Coriander Leaves for garnishing

Method
Heat sufficient oil in a kadai.
Cut paneer into rectangles of two by two inches with one-fourth inch thickness.
And cut into triangle and cut horizontally but end should be join (as shown) and mash the remaining.
Add green chilly and carrot,Salt and mix well.
Stuff  this mixture in  paneer triangles and press them lightly .

Mix cornflour in ½ cup water to make a thick batter. Dip the paneer triangles in the batter and deep fry till lightly golden. Drain on absorbent paper. 




Boil a glass water,then add onion switch off the flame after a min.Drain and ground it.



To make the gravy, heat oil in a nonstick pan. Add bay leaves, cinnamon, green cardamoms and cloves and sauté.Add the onion paste and sauté. Add ginger-garlic paste and sauté for 2-3 minutes. Add tomato puree and mix well. Sauté for 1-2 minutes.

 Add red chilly powder, coriander powder, turmeric powder and  Salt and mix well. Add 1/2 cup of water and boil for 4-5 min. now gravy is thick ,add Paneer triangles and cook for 2 -3 min.
Add cream and cook for a min.,switch of the Flame.




Garnish with coriander leaves and serve hot with rice,roti,naan .

Notes 
If want can shallow fry the Paneer triangles.
Can add kasturi methi along with cream for flavoure.
For stuffing can use Finely chop cashew nuts and Raisins along with mashed paneer.
Can Use green chtuny also in stuffing.

Curry In Hurry | Paneer Recipe

Preparation Time 5 min.

Cooking Time  10 min.
Serving  4
Ingredients:

150 gm Paneer (Cottage Cheese)
For basic curry:
2 onions, chopped roughly
3 ripe tomatoes, chopped roughly
1 tsp red chilly powder
1/2 tsp garam masala powder
1/2 tsp dry Maithi
4-5 cashew nuts  
1 bay leaf
1' piece cinnamon  
3-4 cloves
2 cardamoms
Water as required
2 tbsp oil +ghee
Salt to taste

Method:
Grind together tomatoes, onions, cashew nuts  cinnamon, cloves and cardamoms to a fine paste and keep aside.
Heat oil +ghee in a pressure cooker, add bay leaf and grounded paste.
Stir and cook for 1-2 min. Add all the dry spices and salt. 
Add about 1/2 cup water and pressure cook till two whistles.
Then add paneer, chopped coriander leaves and serve hot with chapatti or rice.



Notes:


You can make same curry with potatoes and mix vegetables.
