Mini Buger With Rawa Tikki | Easy Burger Recipe | Healthy Burger Recipe


I like fast foods very much but these are loaded with extra calories,so always trying to make them healthy.These tikkies made with upma (cooked sooji) I tried rawa rolls before it but
with mased potatoes but this is just like vegetable upma,actually I saw this recipe on Sanjeev Kapoor's Show @Sony TV and I did some changes and enjoyed Happy meal @ Home




Preparation Time : 10 min.     Cooking Time : 30 min.    Serving  : 4
Ingredients
8 Mini buns
1/2 cup butter
Oil to deep fry
Cheese Slices (optional)

For Flavored milk
3 cups milk 
2-2 cloves and pepper
4 garlic cloves
1 cinnamon stick 
2 whole green cardamoms
1 whole onion

For Tikki
1 cup semolina roasted(sooji/rawa) 
1/2 tsp Red chilli powder
2 tbsp oil
1  onions chopped
1 cup chopped mixed peppers (Red ,green,yellow capsicums) 
1 tsp ginger-garlic paste 
1/2 tsp cumin seeds
salt to taste


Dip/Chtuney
1 small bunch of coriander leaves
1/2 cup hung curd
1/2 onion
3 Green chill
1/2 inch ginger
3-4 garlic cloves
salt to taste

Salad
1 small cucumber sliced
1 tomato sliced
1 Onion sliced

METHOD
Heat the milk with all spices in a pan and cook on low heat for 6 minutes. 
Meanwhile Heat the oil in a pan add cumin seeds then add onion and sauté the onions till golden brown then add ginger garlic paste, peppers and cook for 3-4 minutes.
Then add sooji and saute for min. 


Add salt and red chili now strain the milk and pour into sooji mixture and whisk until the mixture is thick.
Grease a plate with oil and pour the mixture into the tray and spread it evenly with a spatula.
Place the tray in a refrigerator for 10 minutes to chill and set.
Cut the set semolina mixture into round or square tikkies. 




Heat the oil in frying pan or kadai and shallow or deep-fry till crisp on the outside. Drain on absorbent paper.
For the dip, blend all the ingredients in a blender till smooth.
Cut the bun apply little butter,then dip,keep a slice of tomato then tiiki put onion and cucumber slice and cover with bun.


Serve hot with tomato ketchup or Green dip.




Note
I used salad in slice but can use shredded or grated also because I felt it's easy to assemble and serve.
For tikkies can use any vegetables like carrot,cabbage,beans,green veggies too and paneer also.
If your tikki is breaking in frying then add 2 mashed potatoes in sooji mixture. 



Another way also-
whisk 4 tbsp maida (all purpose flour) with little milk (1/4 cup) to make a light batter. Season to taste with salt, pepper, cumin powder and chili powder.
Dip the tikkies into the batter and roll them in the crushed cornflakes or bread crumbs or poha (pressed rice) and deep fry or shallow fry.

If you are not Calorie  conscious  enjoy with Cheese ....

Corn canapes Recipe | Bread Recipes


Bread canapes topped with cheese corn turns out really delectable. Flowing My Blogger Friend Preeti Jaipal's Recipe with little change. 


Preparation time 10 min.
Cooking Time 15 min.
Serving  4

Ingredients:
12 bread slices, cut in rounds
1 cup corn, boiled
1 capsicum, chopped
1 onion, finely chopped
6 tbsp cheese spread
3 tbsp hung curd
1 tsp black pepper powder
1/4 tsp cumin powder
Salt to taste
Few cherry Tomato for Garnishing

Method:
In a boil, add onion, capsicum ,corn and add cumin and pepper powder and mix well.
Mix cheese spread and curd.
Now spread mixture evenly on bread slices.Garnish with cherry Tomato.
Cook on non stick pan  for 4-5 min till crispy.



Serve hot with tomato ketchup.



Note 
Can make in oven also.
Can use cheese cube instead of cheese spread,grate and topped on slice just before grilling  but add little more curd.
Bread slice can cut in any shape.

It's Quick n Easy Desert. All time favorable in my house.I remember my Mom always used to do with leftover Bread slices.And another All Delicious Recipes comes from our Moms n Grannies kitchen But name are different. :))



 Ingredients
Serves: 3 Cooking & Preparation Time: 45 mins

4 cups (500ml) Milk 
4 slices Bread 
1 1/2 tbsp custurd powder
Ghee to toast
2 tbsp Nuts (Pista & Badams chopped finely)

For the sugar syrup:
Sugar - 1/4 cup 
Water - 1/2 cup
Method:
Toast the bread with ghee in a non-stick tawa such that it becomes crisp. You can use ur oven or toaster too. It can deep fried in ghee too.keep aside. Cut into desired shape or before roasting also can cut in shape.
Prepare sugar syrup by heating sugar and water in a pan until a syrup like consistency is formed.It should be thick and sticky that's all, don't need to check for string consistency etc.Keep aside.

Boil milk and the custurd powder mixed in 2-3 tblsp of milk and mix into it and simmer the milk until its reduces to a thick but poring consistency.If you want you can add the chopped nuts in this stage.Refrigerate it till use.

Soak each slice in the sugar syrup and arrange it in a plate.Then pour the milk over the bread 
slices to soak well. Garnish with chopped nuts toasted in ghee. Serve immediately.



  Notes:
Deep frying sure is very tasty so once in a while rich indulgence is not a problem...but on low flame and Don't deep fry/toast in oil as it will spoil the taste.
The bread slices should be crispy else when soaked in milk it will become soggy.
If you wish you can cut the sides of the bread.usually I don't remove the sides of the bread.
You can use either white or brown bread. I used brown here.

Masala Pav Recipe | Pav Masala Recipe



It's one of the famous  Street Food. After a long Break here, was Busy with frnds,Family,Parents n today I got time so posting old Post.
FOR ONION-TOMATO MASALA 

Potatoes,boiled, mashed              2 large
Onions,finely chopped                 2 large
Tomatoes,finely chopped 3 large
•        Green capsicum,finely chopped 1 small
Oil                                          3 teaspoon
•       Butter                                        1/4 cup
Turmaric powder                           1/4 teaspoon
Red chilli                                     1 teaspoon
Pav bhaji masala 2 tablespoons
Coriander powder 1 teaspoon
Fresh coriander leaves,finely chopped a few sprigs
Salt                1 1/2 teaspoon

TO SERVE
pavs 6-8
Cucumbers,thinly sliced 2 medium
Tomatoes,sliced 2 medium

Method
Heat oil and butter in a thick-bottomed pan, add onions and sauté on medium heat for two to three minutes till light pink. 
Add tomatoes Capsicum and salt and continue to sauté on low heat till tomatoes are done. 
Add turmeric,red chilli, coriander powder and pav bhaji masala  and continue to cook on low heat for 5-7 min.
Add potato and 1/2 cup water if mixture is too dry and stir it and mash this Masala slightly.
Add fresh coriander and stir to mix well. 
To serve,
 slit pav and Roast on tawa with little butter .
Then arrange tomato and spread the onion-tomato masala (2 or 3 tbsp)and arrange cucumber and serve hot
If You want can use Sev or Mixture also.

Pav Bhaji Recipe


Famous street food of Bombay. Any time I can have, I have remembered when I was in 10th class that time I learned ,Becoz weekly once I want Pav Bhaji n My Mom not Ready to cook .
Preparation Time     15 min.
Cooking Time          30 min.
Serving 4
Ingredients
Potatoes    4 medium

Tomatoes,chopped    6-7 medium
Onions,chopped       4-5 medium
Green capsicum,chopped     1 medium
Cabbage chopped    2 cup
Green peas            1 cup
Ginger,chopped    1 inch 
Garlic             8-10 cloves
• Carrot,chopped    2-3 med.
Oil                     4 tbsp
turmeric powder    1/4 tsp
Pav bhaji masala   2 tsp
Salt                    2 tsp
• Red chilli powder   3/4 tsp
• coriander powder   2 tsp
Butter                 3 tbsp
Pav                     12
• Butter                 1/4 cup
Coriander leaves,chopped 1/4 cup
Lemons,cut into wedges 2
• onion chopped      1 cup
Method
Boil potatoes, cabbage, green peas(separately) in salted water till soft,(take 2 whistle) drain, mash lightly except peas.

Grind onion,ginger and garlic to a fine paste.make tomato puree.
Heat oil in a pan and add onion paste. Sauté till light brown. 
Add turmeric powder,red chilli powder and coriander powder, salt. saute 2-3 min.
Add chopped capsicum and tomato puree.cook till the raw flavoure of tomato disappear.

Add mashed veg and peas(if needed add 1/2 cup of water) cook on medium heat for five min.,stirring continuously.
Add Pavbhaji Masala Cook on medium heat for two minutes. 
Heat 2 tbsp  butter in a thick-bottomed pan or a tawa. 
Slice pav horizontally and roast for half a minute,pressing two or three times or till pav is crisp and light brown.

Garnish the bhaji with chopped coriander leaves,spoon of butter butter and serve hot with pav accompanied with chopped onion and lemon wedges.

Bread Idly Recipe



Bread Idly I got this idea from my Neighbour and it's really quick and fast for Breakfast.I saw this Recipe on one site.


Preparation and cooking time 30 min.
Serving 4
Ingredients
10 Bread slice
5 Potato, Boiled and mashed
2 Green chilly
3/4 tsp Black pepper powder
1 tsp Salt
1 1/2 cup Curd
To Temper
1 tsp Oil
1/2 tsp Mustard seeds
1 tsp Urad dal
Curry leaves few

Method
Mix green chilly,salt,pepper powder in potato and keep aside.
heat oil add mustard seeds and urad dal,curry leaves and mix it in curd and mix salt also.

Cut bread slices into round shape. Spread potato mixture and place on nonstick tawa(potato side should be down).
Pour 2 or 3 tbsp curd on bread  and cover with lid.Cook till bread absorbs all curd ( 2-4 min.)

Serve hot with choice of chutney.

Note
Can add Capsicum,Carrot,Spring onion in curd.

Aloo Matar Sandwich | Potato peas Sandwich Recipe



All time favourite Breakfast but most of time I am making for Dinner.
Preparation Time   15 min.
Cooking Time       15min.
Serving            3
Ingredients
12 Bread slices
1 cup Peas,Boiled
5 Potato,Boiled,Mashed
1 Onion,chopped
3 green Chilly,chopped
1/2 tsp Fennal Seeds (Saunf)
1/2 tsp Cumin seeds
1 tsp Salt
1 tbsp Lemon Juice
1/4 tsp Turmeric Powder
3 tbsp Oil
1/2 tsp Chaat Masala
1/4 cup Butter
2 tbsp Coriander leaves

Method
Heat Oil add zeera,saunf then add green chilly and fry for few seconds.Add Onion and saute till golden brown,then add turmeric powder,salt and add potato,peas mix well.Sprinkle chaat masala and lemon juice,coriander leaves and mix well. Keep aside.



Take bread slice spread butter,then potato mixture and place for grill.

Serve hot with ketchup,Green chutney.

VADA PAV RECIPE



Famous Street food of Bombay. It's simply Best.
Ingredients
•Potatoes,boiled   5-6
•Oil                        2 tablespoon + to deep fry
•Asafoetida             a pinch

•Turmeric powder   1/4 teaspoon
•onion chopped         1 (optional)
•Green chilli chopped  1 
•Garlic,chopped          4-5 clove
•Salt                           1 1/4 teaspoon
•Fresh coriander leaves,
chopped                       1/4 cup
•Lemon juice                 1 tablespoon
•Loaves of bread (pav)   8 small

•        FOR BATTER

•Coarse gram flour (besan)  1 1/2 cups
•Salt                                 1 1/4 teaspoon
•Oil                                  3-4 tablespoon
•Red chilli powder        1/2 teaspoon
•Turmeric powder        1/8 teaspoon
•Soda bicarbonate             a small pinch

     For serving
•Green chutney             1 cup
•Sweet  chutney           3/4 cup
•Chilli garlic chutney     1/2 cup


Method

To make the batter place the gram flour in a bowl. Add salt, red chilli powder, turmeric powder, soda bicarbonate,Hot oil and mix. 
Add sufficient water (1 to 1/1 1/4 cup) and whip to a smooth and thick batter. Set aside for at least fifteen minutes. 
Place the boiled potatoes in a bowl and mash them with your hands. Heat one tablespoon oil in a pan. 
Add asafoetida, turmeric powder, green chilli-garlic paste and mix. Add potatoes and salt and mix. Set aside to cool. 
Add coriander leaves, lemon juice and mix mashing the potatoes some more. 
Divide the mixture into  equal portions and shape them into balls. Heat sufficient oil in a kadai. 
Dip the potato balls in the gram flour batter and deep fry till golden and crisp on the outside. 
Drain on absorbent paper. Slit each pav, spread some chilli garlic chutney,Green chutuney,and green chutney  place a vada and press lightly. Serve immediately.

Cup Pizza Recipe | Bread Pizza Recipe



If not having Microwave , then also can do simple baking.I have Gas oven which mostly using for Dal Bati(rajasthani or Marwadi Cuisine) but I used it for Tandoori Roti,Naan ,Cake also and this time for cup pizza. For pizza using Ready Base Baking in nonstick tawa.

Ingredients
Bread slices 12
Onion                   1
Tomato                1
Capsicum              1
Mozzarella cheese To top
Pizza sauce 2 tblsp

Olive oil 2 tsp
Crushed red pepper To sprinkle on top

Method:

To make pizza cups, cut the bread slices with a lid to a circle. Brush a muffin cup (i used normal cups) with oil and place these bread circles in it so that to make a cup shape.Spread the Pizza sauce.

Sprinkle the chopped veggies and cheese on top of it. Do the same procedure for bread pizza, to the bread directly and bake them in gas Oven.





Bake for 7-9 minutes or until the bread turns golden in colour and crisp too.
Can Make Bread pizza(not cup pizza) on nonstick tawa also.


Both ways and tasty evening snack for your kid is ready!


Notes :
When making pizza cups, you can skip cutting in to circles and just keep the bread as such in the cups.
Use the trimmed part of the bread for making bread crumbs.
